I did emergency trauma nursing for a few years, so here's how it works in real life, not the stupid movies. In a typical Hollywood movie people are stabbed once or twice and they die instantly. That's totally wrong and probably why you think this way; you've been shown the wrong thing for years.
To put it simply, what kills people in stabbings is blood loss. Blood supplies oxygen and removes waste products at the cellular level. When blood leaves the body, or pools internally, it can no longer do its job, however there's still a reserve of oxygen and energy left in the muscle tissues. That reserve allows the muscles to keep moving for maybe another minute or two. Exception to this is if the blood supply to the brain is cut. The brain uses a TON of oxygen just to stay conscious. When the blood supply is cut off it shuts down in seconds. You see this when fighters use a sleeper hold, or when the neck arteries are cut and start pumping blood across the room. I've seen that in person. It's a damn mess.
The only other exception is if the blade somehow cuts the central nervous system, but those nerves are pretty well protected by the skull and spine, so a basic kitchen blade would have a tough time. You need an axe, machete, or lots of little cuts to sever the tendons and cartilage holding the vertebrae together. Or a chainsaw.
Gunshots work the same way, they just have an easier time with the nervous system part because they can blow holes in shit.
It sucks that I know how all this works.
