If its gotten to the point where a gun is drawn and you have to use it in self defense Always Always Always Shoot to kill.
Its better to be judged by 12 than to be carried by 6, also in Arizona i believe they have whats known as thr "make my day law" which in a nutshell means that if somebody attacks you than you have the right to use lethal force to protect youeself.

it's actually easier to explain to police when you shoot to kill. if you shoot to injure they could say you didn't really fear for your life and that you could have had other choices
