Oil and fats are generally the same thing. Meat on the grill had lots of fat in it, which burned like fuel. Water does nothing but repel the oil, sizzling everywhere, making the fire spread rapidly.

how much FAT/OIL did they put that it becomes out-of-control for a grill?!

Just the fat contained in the meat. Plus the grill was probably dirty, so there might have been greasy charcoal that stuck to the meat and added to the fuel. As it cooked, the fat seeped out. When they flipped it, the grease and charcoal got exposed to air. Fwoosh!
