When someone is crushed like that, if they are still able to breathe, they can often stay alive for quite a while, but the SECOND you take the weight off them, they bleed out and die - in seconds.

Yea, it's due to the internal pressure. The lungs rely on that equilibrium to remain inflated, when that pressure ceases, the lungs collapse.
In this case, the truck is doing enough to keep some of the pressure in, so it's postponing the inevitable before the reaper comes to collect his due.

I'm not thinking about the lungs - I'm thinking the pressure of the tire stops the person from bleeding out. When someone is all torn up in an accident like this, when you take the pressure off, many of them lose all their blood very quickly.
