I've actually heard the contrary, beheadings aren't typically that painful relatively thanks to the neck being the least sensitive to pain.
Give it a try. Try pinching the skin on your neck compared to somewhere else on your body like your arm. Most of the struggling is a panic reaction from the airway being obstructed by blood or the blade. This guy didn't have that because they mostly went in from the back.

I have a really random thought when I see these types of videos, I see the clothes they are wearing and I think to myself that just that morning when they chose what clothes to wear for the day and got dressed, and a few hours later they're in this situation. Like something as simple as getting dressed, but a few hours later they're in one of the worse situations I could actually imagine.
