That's actually a great question!

To answer that we have to understand very basically how information is passed around our body. Neurons, nerves. They work by exchanging charged particles (mainly sodium (Na+) and potassium (K+)), they are called ions. By some crazy shenanigans, the neurons exchange these ions with the outside, the interstitium, and cause a potential differential (a difference in electrical charge). This is called resting potential, so that means that every neuron, when resting, or, not working, is electrically charged when compared to the outside. This makes it very easy for a signal to go through the body, because, when a stimulus comes in, the neuron just releases these ions and a little "shock" happens, which signals the next part of the neuron and so on. And neurons control our muscles.

So to sum it up (very VERY simplified), muscles contract because neurons shock them.

If we put an electrical differential from an outside source (live wire) and arc it through the body to the ground, all neurons will activate, so all muscles will contract. And there is a chance your hand will instantly close around the wire, making you glued to it, which keeps the arc going and doing more damage (such as internal burns, heart interference, brain interference) until either the hands burn up so much that they can't hold it any longer, the power gets cut, or the muscles simply destroy themselves and stop working (or an explosion happens, as seen here).

But there are videos such as the following, in which the body contracts, but the person does not get glued. It's very grave, though. Always. Electrical shock can disrupt many things in the body.

Now you ask: why do birds get to sit on wires and not die? The answer is simple: differential potential, distance. Their legs are very near each other, so the electrical arc is not strong enough to disrupt them. If you jumped, and held on to a single live wire with just one hand and be far from the ground or the pole you would not die, nothing would happen. If you held on with both hands very near each other, it would also be kinda okay. If you held on with your arms spread apart, katiau, death.

It is also very important to reiterate that electricity jumps from one person to another. If you see someone elctrocuted, NEVER touch them unless the electricity has been shut off. The following guide has some good tips on what to do.
