Reminds me of the pig who tased a dude on a freeway. Then a car kills the dude. Im not saying I know how to play these situations out better, they're working with shit building blocks to start with. But if the goal is 'dont let him stab anyone or himself' and the solution is 'tase him so he falls knife first'.. I dunno. Let's start with beanbag shotgun to the hands and go from there. The 40mm beanbag is also super effective.

Beanbag shotguns are not safe either. A huge misconception is rubber bullets arent deadly, but they are and in fact are referred as "less lethal" rounds and not "non-lethal" like blanks (and even a blank can kill too!)
I dont blame the cop too much, this dude was clearly a few seconds away from stabbing someone or himself anyways.
